I felt I was falling off the non sugar band wagon of late but all is well, I get this gorge book from my work peeps, the ideal gift! SO I decided to whip out this bad boy this weekend and have a go! The book is the guilt-free gourmet book which is written by Jordan and Jessica Bourke! And they’re IRISH! Better again! Everything in it is free from sugar, wheat and dairy! I decided to make a Sunday aubergine & tomato gratin!
The ingredients were fairly straight forward and I also discovered that you can get Soy cream which was news to me!
So it’s basically aubergine, cherry tomatoes, red onion and some soy cream! So tasty!
OH and let’s not forget a bitta basil!
I’d highly recommend this book!
