Healthy Lunch Ideas – Take Control of your Fork!

Lunch – This is QUEEN time… I’m a real believer in bringing your lunch to work. Not alone is it cheaper, it’s healthier, you know what you’re eating and it’s always way tastier. If I ever forget my lunch, I get so upset, well not really but it’s so annoying as it’s really hard to get a healthy lunch unless you’re going to Wholefoods or somewhere that’s fresh and healthy that’ll cost you! So for the past few days, I’ve been taking pictures of my lunch and thought I would share a few lunch ideas. It’s no secret that I am a Quinoa obsessed freak. I can’t get enough of the stuff! Colleagues in work bring me Quinoa when they see it in Sainsburys as they don’t stock it in my Sainsburys!! Devastation! You can do so much with Quinoa. It’s so diverse that it never gets boring!

Make a big pot of Quinoa (with coconut oil) also cooked in veg stock if you want and add things like feta cheese, red pepper, red onion, veg, pumpkin seeds, chick peas, spinach or anything that takes your fancy!

So tasty! Just make a big batch for like 3 days and then you have lunch already prepared and ready to go int he fridge!

Butternut squash! Boil these bad boys, add some chili for spice. All in veg stock and then blend. Oh and coconut oil too if you like. Makes it taste DIVINE!

Quinoa bread and mashed avocado with something on top. Can’t remember what that was! Some form of spice!

The key to bringing your lunch is preparation! Make lots of stuff on a Sunday and then have another night in the week if you need to make more! Get decent Tupperware too! Makes it way more exciting! I have some tubs that you can put directly into the microwave so no messing with bowls etc. You can also use it for salads and anything else!

Lunchtime at work does not have to be boring. It can be tasty! Quinoa, Barlotti beans, avocado, pumpkin seeds. Cooked in veg stock and also coconut oil in there!


Be a Queen at lunch!! Take control of that fork and spoon!
